I completed the autumn 12 week course at Ballymaloe in 2004 and had the most enjoyable and inspiring 12 weeks. I owe a huge amount of thanks to Darina and all the amazing team for all their enthusiasm and teachings.
In 2012 I setup a healthy, delivery food business POTAGE in Central London with a goal to make 'eating well' easy. For the first year I did all the cooking at home and delivered on a bicycle, we now have a small team and have just moved into a new premises in Battersea. The focus is on freshly prepared food made by hand using organic meat and eggs, and fresh veg from the local market. The menu changes weekly with a seasonal choice of pots throughout the year. We believe a healthy diet involves fresh seasonal ingredients, balance and portion control.
