Classic Techniques

During the past year we've had several requests from busy people who want us to create a course to teach classic cooking techniques from basic knife skills to making the perfect mash. During the course of three demonstrations and two practical sessions you will learn all the following and more.

Peel, chop, slice and dice. Sweat an onion. Stock syrup and variations. Short crust pastry, line a flan ring or tart tin. Segment citrus fruit. Make a crumble. Make mayonnaise. Joint a chicken, fillet a flat and round fish. Whip cream. Pan-grill. Cook a steak or chicken breast. Make an omelette. Poach and scramble eggs. French dressing and green salad. Make soda and Ballymaloe yeast bread. A fruit fool. Basic soup and variations. Jam. Stew. Make a lemon curd. Cook pasta and make a basic pasta sauce. Melt chocolate. Make a caramel. Make a simple fruit salad. Cook a green vegetable. Cook carrots. Make fluffy mash. Make yummy roast potatoes. Buy and cook. Make a risotto. Clean and cook prawns or shrimps. Make shortbread. Use gelatine......

When you book, please tell us if you have a specific technique you yearn to master and we'll do our best to include it in the course.

Accommodation:
Accommodation is available in our self catering cottages for the duration of this course if required. We offer a delicious continental breakfast as standard for all students staying with us and attending any of our short courses. We serve freshly made breads, warm porridge with our own Jersey cream and soft brown sugar, freshly squeezed orange juice, raspberry museli and more to get you set up for the day. Accommodation is subject to availability and we will contact you after booking to confirm accommodation.
