This course is presented by Debbie Shaw, Chef, Cookery Teacher and Naturopathic Nutritionist. Debbie has worked as a teacher and cookery demonstrator at the Ballymaloe cookery school for 10 years. She qualified as a Naturopathic Nutritionist in 2010.

Healthy eating is not about sacrifice, deprivation or bland uninspiring flavours. With this Feel Good Food Let’s Cook Course, I promise to deliver enticing, tasty food that satisfies both body and soul. The course is designed for anyone who would like to feel more energetic, youthful, healthy and happy.

Over one and a half days students will get a simple introduction to eating for long-term health, as well as two cookery demonstrations using the freshest, organic, fruits, vegetables, herbs and dairy products from Ballymaloe Cookery School organic farm and gardens. The course will also cover modern health-giving trends in cooking including raw food for maximum nutrition and fermentation for digestive and immune health. I draw inspiration from the Irish, Mediterranean, Middle Eastern and Asian kitchen, to create recipes that are both energising and full of flavour.

The really exciting part is that students will have a chance to cook with new ingredients they may not be familiar with from our organic gardens and the best of local suppliers. You get to have fun in the kitchen, cook and sit down together and feast on what you have cooked!

I grew up in the heart of suburban Dublin in a house on ½ an acre, with an enlightened father who grew beautiful, organic vegetables, had solar panels on the roof before they were fashionable, and ran a health-food business. Being the objects of mild curiosity, was a small price to pay, and I still remember the taste of the squeaky French beans that turned from purple to green when cooked, and the best new potatoes I have ever eaten. As a child I do not remember having any significant illnesses or even frequent colds for that matter. I’m sure I owe this resilience to the wonderful, natural foods my parents grew and cooked for me.
I was a vegetarian for 14 years, before I came to the Ballymaloe Cookery School as a student, and decided to taste everything on offer, to fully embrace the experience. The Ballymaloe philosophy of seasonal, organic, home-grown produce, sat well with my evolving culinary heritage. I have worked at Ballymaloe Cookery School and Ballymaloe House as a chef, cookery demonstrator and teacher for 12 years with Darina Allen, Rory Allen and Rachel Allen, and with international chefs during the LitFest such as Madhur Jaffrey, Yotam Ottolenghi and Denis Cotter.
I have always been interested in the healing power of foods and in 2007, I decided to expand my knowledge in the field, by studying to be a Naturopathic Nutritionist with CNM College, at the Bon Secours Hospital in Cork city. I qualified as a Nutritionist in the summer of 2010. In 2012 I started a company called “Apple a Day Nutrition”, to promote health and wellbeing.

My recipes are fresh, light, simple and affordable, and use wholefoods to give the body what it needs for optimal health and happiness. Health for me is not about sacrifice, deprivation or bland uninspiring flavours. My promise is easy to prepare recipes, full of flavour, that satisfy body and soul. When we wake up in the morning we should have the energy to live our lives to the full and to do everything we need to do.
